01/12/2011 Mandarin Orange, Cashew Salad

Ingredients: 4-6 servings

  • 2 TBS lemon juice
  • 1 tsp Dijon Mustard (I used Spicy Brown Mustard.)
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 Cup vegetable oil ( such as Canola Oil)
  • 1/4 Cup vinegar
  • ———————–
  • lettuce, torn into bite sizes
  • canned mandarin oragnes, drained
  • some radishes, thinly sliced, cut
  • Roasted and Salted Cashew Nuts, chopped coarsely with FP


  1. Combine first 7 ingredients to make dressing. 
  2. Toss lettuce, orange, radish, nuts.
  3. Pour dressing over vegetables.

The original recipe used almond slice instead of cashews.  It caramerized nuts with a lot of sugar.  It also used the red onions instead of radishes. The original dressing did not include vinegar, and it was nearly 100% oil.  I suspect that 1/2 C vegetable oil was meant to be 1/2 TBSP vegetable oil.
