03/01/2011 Chicken Spaghetti

Ingredients:

  • Chicken Breast, sliced thin
  • vegetable oil
  • salt
  • pepper
  • spaghetti, boiled in plenty of water, drained
  • Prego Spaghetti Sauce
  • spinach, MWP, cut
  • (optional) parmesan cheese, grated

Procedures;

  1. In a skillet, heat the oil, sautee chicken with high heat.  Pour enough water over the skillet, remove from the heat, pour through a strainer, wash the meat, wash the skillet, place the meat back to the skillet, heat the vegetable oil, sautee chicken until crisp.
  2. Season chicken with salt and pepper, slightly.
  3. Place spaghetti on the serving plate, top with chicken, spinach, and spaghetti sauce.  Serve with parmesan cheese.

02/07/2011 Ginger Mizuna Pasta

Ingredients:

  • olive oil
  • Chicken Karaage, sliced thin
  • Crisp Bacon Bits, broken into bits with fingers
  • ginger powder
  • spaghetti, cooked in boiled water, drained
  • fresh Mizuna, cut into 4 – 5 cm lengths
  • salt
  • MSG (optional)

Procedures:

  1. Heat the olive oil in a skillet.  Add Chicken Karaage, bacon, and ginger powder and stir.
  2. Add spaghetti and Mizuna, and stir-fry.
  3. Season with salt, MSG, and ginger powder.

Ingredients: 6 servings (11″x7″x1″ baking dish)

  • 6 lasagna noodles (136 g)
  • boiled water
  • ————————
  • 1/2 LB (226.8 g) ground beef
  • some water
  • 24 oz (680.4 g) Prego Spaghetti Sauce (Any bottled/canned/homemade spaghetti sauce will do.)
  • ———————
  • 372 g ricotta cheese
  • 126 g shredded mozzarella cheese
  • 1 egg
  • ————————–
  • 27 g parmesan cheese, powder

Procedures:

  1. Cook Lasagna in boiled water for 12 min, leave the noodles in the hot water until soft enough.
  2. Heat the skillet, brown the ground beef, pour enough water and boil to get rid of foul meatiness and excess fat.  Drain and rinse through a strainer.
  3. Mix beef and Prego Spaghetti Sauce in a large bowl.
  4. In another medium bowl, mix ricota, mozzarella, and an egg.
  5. In a baking dish,  layer 1 Cup (240 cc) Prego Meat Sauce mixture, then 2 noodles (cut off the extended noodles with scissors and place the cut pieces on top of the exisitng noodles), then half of cheese mixture.
  6. Repeat step 5: Prego layer->2 noodles->the remaining cheese mixture.
  7. Layer 2 noodles->Prego layer to finish.
  8. Bake at 400F for 30 min.  Turn off the heat.  Let stand 10 min.
  9. Cut into 6 pieces, transfer to the serving dish, sprinkle with parmesan cheese.

11/15/2010 Takana Spaghetti and Chicken

Ingredients: 2 servings

  • 100 g Spaghetti
  • 3 L water
  • 30 g salt
  • ————–
  • 60g ラー油高菜スパゲッティソース、(Mongolean Oil Takana Spaghetti Sauce)
  • Fried Garlic & Red Pepper Topping
  • ーーーーーーーーーーーーー
  • 2 pieces Chicken Thigh
  • vegetable oil

Procedures:

  1. Cook spaghetti in plenty of boiling salt water.  Drain and place on serving dish.
  2. Pour Takana Spaghetti Sauce and mix.
  3. Sprinkle Topping
  4. In a skillet, saute chicken with vegetable oil.
  5. Serve chicken and spaghetti sauce together.

Comments:

This ready made sauce was too salty and not palatable.  So I added unseasoned sauteed chicken to weaken the salt in the spaghetti sauce.

The sauce ingredients are Takana pickled with salt, sesame oil, canola oil, rice oil, salt, garlic, sugar, Mongolian fire oil, starch, soy sauce and anchovy.

The garlic is made from  deep fried garlic and red pepper.

Given those ingredients, this can be made from scratch instead of buying the sauce/topping.

10/15/2010 Sausage Penne Pasta

Ingredients:

  • Sausage, cut into small pieces
  • Bell Pepper, sliced thin
  • Swiss Chard, Use only leaves (not stems) and cut small
  • Garlic Chives, chopped
  • Penne Rigate Pasta, cooked with plenty of water and drained
  • black pepper
  • parsley flakes
  • MSG (optional)
  • Parmesan Cheese, ground

Procedures:

  1. In a skillet (without adding oil), stir-fry sausage and bell pepper until cooked.
  2. Add Chard and Chives and stir-fry.
  3. Add Pasta and stir-fry.
  4. Season with black pepper, parsley, and MSG.  (No salt necessary.)
  5. Place on a plate and sprinkle with Parmesan Cheese

10/13/2010 Ground Beef Penne Casserole

Ingredients:  ( for 4 servings, 8″ x 8″ Pyrex Oven Dish)

  • 70 g Penne Rigate
  • water
  • 150 g ground beef
  • vegetable oil
  • 1/2 medium onion, minced
  • some dried or fresh Shiitake Mushroom, soak with plenty of water for at least 30 min and  minced
  • ——————-
  • 20 g regular salted butter
  • 4 TBSP all purpose flour ( or cake flour)
  • 4 TBSP milk
  • ————–
  • 2 TBSP ketchup
  • 1/2 tsp salt
  • ——————
  • 2 eggs
  • 50 g Mozzarella Cheese, shredded

Procedures:

  1. MW Penne Paste with plenty of water until cooked and drain.
  2. MW ground beef with plenty of water, drain and wash the meat well.
  3. In a skillet, heat the vegetable oil and stir fry beef, onion, and Mushroom until cooked.
  4. MW butter in a medium bowl, until melted, add flour and mix.  Add milk and mix.
  5. Add ketchup and salt to the white sauce above and mix.  Add Penne and mix.
  6. Transfer into a baking dish, flatten the surface, top with 2 eggs, sprinkle shredded cheese.
  7. Bake at 230C (450F ) in the oven (No PREHEATING) for 20 min, until cheese has slight browning.

The original recipe called for ground pork, which was replaced with ground beef.  I added Mushrooms.

It is not my taste.  First of all, the white sauce and ketchup does not go well together.  I don’t understand why eggs need to be in this, either.  I cannot believe that this was one of the selected daily recommended recipes by cookpad.com.  I don’t think changing the ground beef to ground pork will improve this weird recipe.  Fundamentally flawed.

10/11/2010 Penne Pollo with Garlic Chive

Ingredients:

  • Penne Rigate pasta
  • water
  • 1 tsp salt
  • ———————–
  • chicken tenderloins
  • water
  • ——————-
  • vegetable oil
  • Garlic Chives, chopped.
  • Four Cheese Alfred Sauce (in a jar)

Procedures:

  1. MW Penne Pasta with water and salt until cooked.  Drain pasta and set aside.
  2. MW chicken with plenty of water until boiling, drain, wash the meat and shred with your fingers.  Discard hard sinew.  Set aside.
  3. In a skillet heat the oil and stir-fry garlic chives and chicken.  Add cooked penne.
  4. Add Four Cheese Alfred Sauce and mix.

Ingredients:

  • Penne Regate
  • water
  • salt
  • chicken breast
  • water
  • parsley flakes
  • Four Cheese Alfredo Sauce (Classico)

Procedures:

  1. In a large Pyrex bowl, place Penne, water, and salt.  MW (1.6 kw) 18 min until Al Dente.
  2. Drain the hot water.
  3. MW  chicken in a medium Pyrex bowl with plenty of water until boiling, drain water, wash chicken and bowl, and repeat refilling water, boiling, draining, and washing 2 more times.  Drain and shred/tear the meat with your fingers.
  4. Mix Penne, chicken, and Alfredo Sauce.  Sprinkle parsley.

07/22/2010 carrot top pasta

Ingredients:

  • Water
  • salt
  • Whole wheat thin spaghetti ( can be any pasta), broken into halves
  • Vegetable Oil
  • sausage, chopped
  • carrot top, MWP, minced with FP
  • Sun Dried Tomatoes (or tomatoes), chopped
  • salt
  • pepper

Procedures:

  1. In enough water in a large Pyrex bowl, add a little salt and spaghetti, MW (1.6 kw) 10 minutes or until cooked.  Drain water.
  2. Heat vegetable oil in a skillet, stir-fry sausage, carrot top, sun dried tomatoes.
  3. Add cooked spaghetti.  Mix.  Season with salt and pepper.

Comments:

The whole wheat thin spaghetti purchased at Wal-Mart was very bad.  It cannot hold the structure when heated and breaks into tiny pieces, and get mushy.  I will never buy it again.

07/14/2010 Nikomi Spaghetti

Ingredients:

  • 30 g celery, chopped
  • 50 g green onion, chopped
  • 1 tsp minced garlic
  • 2 TBSP olive oil
  • ——————–
  • 160 g thin whole wheat spaghetti (purchased at Wal-Mart), broken into half length
  • 75 g bell pepper, chopped
  • 40 g sausage, chopped
  • 120 cc spaghetti sauce
  • 280 cc water
  • ————-
  • salt
  • pepper
  • Parmesan cheese

Procedures:

  1. In a 2L casserole dish, place celery, green onion, garlic, and oil.  Cover and microwave for 2 min (1.6 kw). (3 min for 600 W).
  2. Add spaghetti, bell pepper, sausage, spaghetti sauce, and water.  Mix and microwave, covered, for 5 min.
  3. Sprinkle some salt and pepper if necessary.
  4. Microwave 3  minutes (1.6 kw), uncovered. ( 5 min for 600 w).
  5. Serve with salt, pepper, and Parmesan cheese.
